[#Ad21+] This Hispanic Heritage Month, I am celebrating with @makersmark! I am preparing Maker’s Mark-infused pork tostadas, a dish incorporating some traditional Mexican flavors I grew up with. I am pairing it with a refreshing Maker’s Mark pineapple-lime cocktail. This meal is a tribute to the beautiful sobremesa moments that connect us and allow us to honor our traditions while sharing a delicious meal. Pineapple Lime Cocktail with Maker’s Mark Serving Size: 1 cocktail Prep Time: 5 mins Ingredients 1.5 parts Maker’s Mark Bourbon 2 parts pineapple juice (freshly squeezed) 1 part lime juice (freshly squeezed) 2 parts sparkling water or club soda 1 dash of Angostura bitters (optional) Pineapple wedge Instructions In a cocktail shaker filled with ice, combine 1.5 parts Maker’s Mark Bourbon, pineapple juice, lime juice, shake well until chilled. Fill glass with ice, strain mixture over ice. Top with Sparkling Water or Club Soda Garnish with a wedge of pineapple rim of glass Serve cold Pork Tostadas with Pineapple and Maker’s Mark Servings: 4 Marinating: 1 hr Cooking : 1 hr Ingredients 1 Lb. pork shoulder, cut into chunks 1/4 cup Maker’s Mark bourbon 1/4 cup pineapple juice 1/4 fresh pineapple, diced 1 arbol chili, (seeded for less heat) 1 tsp cumin powder 1 tsp garlic powder 1 tsp. chili powder 1 bay leaf Salt & pepper 2 ravocados,peeled & pitted 1 lime, juiced Salt 8 tostada shells Avocado spread (as prepared above) 1/2 cup red onions, thinly sliced 1/2 cup radishes, thinly sliced Salsa macha Lime wedges Instructions: Combine Maker’s Mark, pineapple juice, diced pineapple, arbol chili, cumin, garlic powder, chili powder, bay leaf, salt, and pepper. Add pork, cover, marinate for 1 hr. Place pork in a pan over medium heat. Cover, simmer for 1 hr or until tender. Remove pork, discard bay leaf, shred pork. Mix reduced cooking liquid with pork. In separate bowl mash avocados with lime juice and salt until smooth. Spread avocado spread on tostada shells. Top with pork, red onions, radishes, salsa macha.
