Carrot Cake, two ways! I love my carrot cake with cream cheese icing and spiky candied carrot peel spires (scroll). It was a proud moment when I came up with a way to use the heap of peels on my cutting board. Beauty, function and just fun. Starting with great produce is key to the flavor of any carrot cake and in this week’s episode of Zoë Bakes I visit @thegoodacremn to pick up locally grown produce. They came out of the oven even deeper orange than they’d gone in. The flavor was sweeter because the sugars concentrate as they bake. I ate some with dinner and decided to turn the rest into an upside-down cake. What emerged from the oven was stunning but even more importantly, it’s so delicious. My husband declared it one of the best cakes I’ve ever baked. Graham never holds back an opinion or a helpful critique, so when he says something is tasty, I know I’ve got a winner.
