BORANI KACHALU• ranks top 5 favorite Afghan dishes for me. Mainly because I’m a potato lover but also because of how easy and delicious it is! Give it some EXTRA love and focus on those layers when baking this one off and i promise it is 🤌🏼 here’s how to make it below! RECIPE: •Yellow/gold potatoes (cut however you like) -Have 2-3 pans ready. One for frying one for baking. •To the baking pan (without any heat) add in raw round slices of onions, tomatoes, and some fresh garlic cloves. Set it aside •To the frying pan heat up a little oil and to it add 3 spoonfuls of tomato paste + 2 spoonfuls sweet pepper paste + 1 tsp minced garlic. Let that fry up for a minute then add in your SPICES: 1 TBSP ground coriander, 1 tsp ground cumin, 1 tsp salt, 1/2 tsp turmeric, 1/4 tsp cayenne (optional for heat). Mix well •begin to add water until desired consistency of a sauce. Taste test •only using HALF the sauce- top the raw onions and tomatoes with it. Res#erve other half •now fry your potatoes until golden on each side and as they fry- layer it into the sauce, onion, and tomato pan until done. •use the reserved sauce and top it on the potatoes. Close the lid. Heat on medium low and let this bake through for 10-15 minutes SERVE: -spread a layer of mint yogurt onto your serving dish. Top the potatoes, onions, and tomatoes. Layer more yogurt. I like to fry some jalapeños and top it off as well. Garnish with dried mint.
