2 Layer Matcha and Vanilla Burnt Basque Cheesecake - recreating Sea Turtle Cafe’s cake! One year ago, I visited Sea Turtle Cafe with my mom and dog and to this day, this cake stuck in my mind. Over the year, I have tried to make this cake more than 5 times, and I am happy to say I have figured it out! Tools: 7inch/ 18cm springform cake tin Ingredients: 560g Cream Cheese (2 @philadelphia_uki bigger family size 280g tubs), room temp 150g Caster Sugar Splash of Vanilla extract Pinch of Salt 4 Large Eggs, room temp 200g Heavy Cream 20g Plain Flour 1-2tbsp Matcha Powder (ceremonial grade and feel free to add more or less depending on how much you like matcha!) 1tbsp Powdered Sugar 1 Lime Steps: 1. Preheat oven to 200°C. Take a large piece of parchment, ball it up then unfold it. Press it into the cake tin so a lot of the paper is sticking above the cake tin. 2. Using an electronic mix, whip up the cream cheese so that it’s smooth 3. Add sugar, vanilla, and salt. Mix until smooth. 4. On the slow-medium setting, mix in the eggs until its homogenous 5. Add the cream and mix 6. Sift in the flour and give it one last mix. The batter should be jiggly and thick. 7. Pour 1/3-1/2 of the batter into the cake tin. Spread it out and smooth out the top. Place it into the freezer so it can stiffen up 8. Scoop 2-3 tbsp of the remaining batter into a separate bowl and sift in the matcha powder. Mix aggressively to ensure that there are no lumps 9. Pour the matcha portion into the remaining batter and fold everything together until homogenous 10. Grab your cake tin and gently pour the matcha batter over the vanilla 11. Smooth out the top and give it a tap so everything evens out 12. Bake on the lower rack at 200°C for 45-50min. At 25min, check to see if the top is burning too quickly. If it is, place a piece of aluminum foil over the top. 13. Place the cake into the fridge and let it chill overnight before you de-mold 14. Dust the top with powdered sugar and zest an entire lime on the surface. #matcha #cheesecake #seaturtlecafe #taiwan #calm #bakingrecipe #cakerecipe
