Swirled Apple Tarte Tatin! Today I taught a baking class and a brilliant young baker (10 years old) asked what my favorite dessert is. I usually avoid being specific because my mood changes and I constantly want different desserts. Today I named it and my favorite is an Apple Tarte Tatin. It’s the season for it and there is almost nothing better than caramelized apples resting on puff pastry. There are many versions to make. I have a few on my website and love them all, but this swirly one is extra special. 🔗🍎🍏Link to all my favorite apple desserts in my @zoebakes BIO! As I scroll through instagram I am constantly inspired by other bakers, some at home and some in pastry shops around the world. This swirly tarte tatin was inspired by William Lanagnere (@milkchef_off), a pastry chef in Paris who took the rustic French classic and turned it into something beyond elegant. I marveled at the perfect spiral of apples and figured he had been paying much closer attention in the knife skills class than I did in culinary school! Then I realized there is a kitchen tool I didn’t yet own; one that creates delicate ribbons of apple (scroll). I bought one (link in post) and in my video (link to reel in my story) I'll show you how I created my version of this caramelized apple dessert at home.
