PROSCIUTTO & FIG TART… a beautiful way to use the seasonal figs, and very easy too. This is meant to be a ~party food~ aka an appetizer, something to bring somewhere to impress, something to make someone to impress (basically it’s impressive), or a component of a lunch or brunch. It’s sweet, savory, salty, and delicious (my entire family ate it). Recipe below: Needs: 1 puff pastry dough (you can find in frozen section of most grocery stores), about 3/4 cup crème fraiche or sour cream, 3-4 larger figs (if you can find another varietal, fresh), 9-10 black mission figs (fresh), 1 burrata, 1/2 lb fresh prosciutto, arugula or another earthy green like mache, salt, olive oil, honey, egg for egg wash Directions: -Preheat oven to 400 degrees. Defrost the puff pastry and lay on a floured surface. Scour the sides of the dough with a fork and then make holes in the entire dough with same fork. Spread the crème fraiche all over leaving about a one inch border on all sides. -Layer on figs in a pattern of your choice! I did a row of each type. Drizzle on a generous amount of honey and a large pinch of salt -egg wash the sides of the dough, don’t leave any bare or exposed -add tart to a sheet pan and cook at 400 for about 20 min or until golden (watch it! It cooks fast) -once done, delicately place burrata, greens, and prosciutto in a pretty pattern on top. Optional to add more salt, but definitely add a little drizzle of olive oil.
