It’s been a while since I posted a picture on here and I definitely hadn’t planned to post this but I think it deserves it… Lasagna is one of those dishes that always transports me to my childhood, my nonna pours so much love and effort into every lasagne making tiny meatballs instead of just a ragu and she’d make trays and trays of it for birthdays, weddings and any other party! I’m still yet to try one better than hers… She even catered for my mum and dads wedding making enough to feed all 300 guests My version is a six hour low and slow ragu made of minced brisket and pork belly - super rich and full of body after slowly breaking down with plenty of red wine and good quality beef stock and quality chopped tomatoes from @muttipomodorouk 48 month aged parmesan and plenty of mozzarella for a rich creamy béchamel and a little hit of fresh nutmeg (one of nonnas tips) before all being carefully layered up and baked! The toughest bit for me is letting it sit on the side to rest before cutting into a slice!
