This applesauce streusel cake made the entire kitchen smell like the warmest cozy cinnamony sweet bakery in the woods vibes. My kitchen really does come alive again in the Fall. I don’t love chunks of apples in my baked goods unless of course it’s a pie, so decided to use applesauce instead and it made the cake incredibly moist and soft. I had this for breakfast for 3 days in a row with some coffee and it was the best! 🍏 🍎 Applesauce streusel coffee cake: 1 1/4 cup unsweetened applesauce ½ cup unsalted butter ½ cup granulated sugar ½ cup brown sugar 2 eggs, large 1 tsp vanilla extract 2 cups all-purpose flour ½ tsp kosher salt 1 tsp baking soda ½ tsp cinnamon ½ tsp apple pie spice In a large bowl, cream the butter and sugars together until light and fluffy. Next, add in the eggs, applesauce, vanilla, and mix until combined. In a separate bowl, add the flour, salt, baking soda, cinnamon, and apple pie spice. Add the dry ingredients to the wet in 2 parts, beating after each addition. Finish off with the spatula then pour into a greased pan dusted with flour. Add the streusel on top and gently press down into the batter. Bake at 350 degrees for 16-18 minutes until golden brown. Enjoy!
