Shakshuka 3 Roma or beefsteak tomatoes, cut with a cross in the bottom 1 Italian long hot pepper 1 white onion small diced 1 red bell pepper small diced 2 cloves garlic thinly sliced 1.5 tsp ground cumin 1.5 tsp paprika 3 @happyeggcousa eggs Chopped parsley for garnish Chili flakes for garnish 3Tbsp tomato paste Zest 1 lemon -Boil the tomatoes in salted water for 30 second, remove and place straight into ice water for 3 minute. This will loosen the skins (this is called concasse) -Remove skins, and dice tomatoes after removing the core. -Prep the rest of the vegetables -Sauté onion in 3 Tbsp EVOO until translucent -Add red bell pepper and continue to cook 3 minutes over medium heat -Add long hots, garlic, and lemon zest. Continue to cook 2 minutes -Add dry spices, and tomato paste. Reduce heat to medium/low and cook for 5 minutes -Add chopped tomato, stir and cook covered 10 minutes over low heat -Remove lid, create small divots for the eggs with a spatula. Crack eggs into divots, cook over low heat covered for 4-5 minutes or until desired egg done-ness -Garnish with parsley and chili flakes.
