Stovetop Mexican Quinoa by @megunprocessed Save this for an easy dinner idea 💡 Share and tag someone who’d love this recipe! 🤍 STOVETOP MEXICAN QUINOA BY @megunprocessed * 1 tablespoon avocado oil (can omit for water if oil-free) * 2 cloves garlic, minced * Half an onion, diced * 1.5 cup vegetable broth * 1 (15 oz) can black beans, drained and rinsed * 1 cup quinoa * 1 (14.5 oz) can fire roasted diced tomatoes * 1 red bell pepper, diced * 1 teaspoon cumin * 1 teaspoon chili powder * salt and black pepper, to taste * 3 tbsp chopped fresh cilantro leaves * Juice of 1 lime Optional add-ins * Cashew Sour Cream (recipe on my website or Google “megunprocessed cashew sour cream) * 1 Avocado, diced 👉INSTRUCTIONS * Heat avocado oil and garlic in a large skillet over medium high heat. Add the onions and cook for one-two minutes. * Next add the vegetable broth, quinoa, tomatoes, beans, peppers, cumin, chili powder, salt and pepper. Bring to a boil then cover, reduce heat and simmer for about 20 minutes, until quinoa is cooked through. Stir in lime juice and cilantro. Add sour cream and/or avocado.
