Zucchini blossoms are in season right now. My favorite prep is to stuff them with fresh cheese, batter in a light yeasted dough that I learned to love in Sicily and then deep fry in avocado oil. This recipe makes roughly enough for two dozen blossoms. Here’s how: ✨ Make the batter by whisking 2 teaspoons dry yeast with 2 1/4 c warm water and 2 c + 2 T flour and 1 tablespoon olive oil. Add salt and pepper to taste. Let rest in a warm spot for 1 hour. This Sicilian recipe is from my very favorite cookbook- La Cucina Sicilians di Gangivecchio - get yourself a used copy as it’s out of print if you love the cuisine of Southern Italy! ✨Make the filling by whisking one cup farmers cheese or ricotta with one egg and 1/2 c grated parmigiano. Add finely chopped fresh herbs if you’d like and salt and pepper to taste. ✨ Open the blossoms gently and add a teaspoon of cheese mixture. If you are fortunate enough to live in a house with a veggie garden this is easy as the open flowering blossoms are easy to fill. If you buy at the market it’s a little harder but takes patience - you got this!! Also, I always end up frying a bunch of them empty when I run out of patience or cheese 😂. ✨ Heat 3 inches of your favorite frying oil to the point where it is hot but not smoking. I test this heat by tossing a fresh sage leaf into the oil, it should crisp up quickly but not burn. ✨ Dip each flower into the batter and release into the oil. Turn them once while cooking, they should be golden and crisp all over - it takes about 3 minutes to fully cook. This batter is also delicious on thin slices of zucchini, sage leaves or any fresh flavorful leaf or vegetable. I fried these over the open fire on my @seaislandforge at the start of cooking a meal on the fire - it’s a great way to use the hot fire at the start of wood fire cooking.
