I loved eliminating the slicing and boiling of fresh carrots for this Moroccan carrot salad - it made the sometimes arduous task of making homemade salatim so much easier using @bganfoods, available at @seasonslawrence. I used half the bag of frozen carrots and thawed it out, sautéed 2 cloves of garlic in a few T of olive oil, added 2-3 T of harissa from @pereggourmet , a tsp paprika and a half tsp of cumin, salt and pepper to taste. I added the carrots and squeezed the juice of a lemon on top and finished with some chopped parsley.
