Owwwww….Baghala Ghatogh 😮‍💨🫘 Baghala Ghatogh is a traditional Iranian dish with roots in the northern regions, specifically Gilan and Mazandaran provinces. This centuries-old recipe showcases the region’s culinary heritage and the abundance of beans in the area. Combining beans with dill and garlic, this flavorful and nutritious dish has become an integral part of the local cuisine, symbolizing the rich flavors and traditions of the Caspian Sea region. Serve with basmati rice, smoked salted fish and pickled garlic. 😋 2 cups peeled baghala keshavarzi or mahali (you may substitute with fava beans) 2 tbsp turmeric 3 tbsp dill 1 small head garlic 4 eggs Oil for frying S&P 1. Soak the beans in warm water for 5-8 hours to overnight and peel them. 2. In a large pot or Dutch oven add a bit of oil and all the ingredients except the eggs. 3. Sauté the ingredients until lightly golden and fragrant. 4. Season with salt and pepper to your liking. 5. Add enough hot@water to cover the beans. I used just under 4 cups. 6. Bring to a boil then simmer low for 10-12 mins until the beans begin to tender and the flavors have melded together. 7. Crack the eggs into the pot and cover to simmer until desired level of doneness. 8. Serve the baghale ghatogh with steaming hot rice, pickled garlic, smoked fish and ENJOY!
