Crispy Enoki Mushrooms 🍄 a quick 15 minute snack - perfect for those dusty Sundays 😅 This recipe uses a dry batter and less oil with shallow frying - so really cuts down on a lot of potential food wastage and any clean up. Give these little baybees a go and let me know how you go 🥰 Recipe 👇 Ingredients 1 bunch enoki mushrooms 2 Tbsp flour 3 Tbsp cornstarch/cornflour 1 tsp salt 1/4 tsp white pepper powder Neutral oil for frying (e.g. vegetable, grapeseed) Method 1) Cut the root end off a bunch of enoki mushrooms and discard. Break the mushrooms apart into little bundles, wash and pat slightly dry with paper towels. Add flour, cornstarch and salt to a large plate and mix well. Toss the mushroom bundles in the flour mix and set aside. 2) In a large frying pan, add about 1/2 cup of oil (or so it comes 0.5cm up the side of the pan) and heat to 180C/350F (or until a wooden chopstick is inserted and starts forming small bubbles). Fry mushrooms in batches, 2-3 minutes per side until golden brown. Add the fried mushrooms to a wire rack and sprinkle flaky salt over immediately.
