Celebrate the beauty of the Rosh Hashana Simanim 🍎🍯🥕 with this exquisite grazing board. Each vegetable can be enjoyed separately, or you can just mix it all together, making it a delightful side dish for Rosh Hashana or any meal. Glazed Simanim Grazing Board @erin.eats.mtl Ingredients: 1/2 butternut squash, peeled, halved, and sliced 1/4” thin (or thinner) 🔪 4 small or 3 medium beets, peeled and sliced 1 leek, sliced in half lengthwise and then into 2-3 Colorful carrots 🥕(preferably skinny ones), peeled (if thicker, sliced lengthwise) 🍯 Glaze: 1/4 cup extra virgin olive oil 2 tbsp honey 🍯 1 tbsp pomegranate molasses/syrup 1 tbsp Dijon mustard Salt & pepper 🌿 Garnish: Pomegranate seeds and thyme Directions: Preheat oven to 375°F. Drizzle a generous amount of oil on a baking sheet and use your hands to spread and fully coat. Artfully place the veggies onto the sheet pan, in a single layer. Brush veggies with the glaze ingredients. Bake for 50-60 minutes. Serve on the tray, garnished with thyme and pomegranate seeds.
