I found out the name of the little plums I got the other days, which I mentioned in my IG Live. are actually called “Jam Session” plums in English, and their tart, tangy flavor makes them perfect for jam. (They’re similar to Damsons but not the same thing.) We had the freshly made jam for breakfast this morning with nutty bread from @terroirsdavenir and salted butter from Normandy. Romain did ask if I’m going to film🎬our breakfast every morning😅and I assured him that I wouldn’t. But I could resist sharing this😊one last time… I made the jam by cooking the pitted plums, then measuring them out and adding 3/4 of their volume (or weight) in sugar as well as some lemon juice. I cooked it to 218-219F/103 (although these plums had a lot of pectin so it jelled up a bit firmer than usual).
