Ladies and gentlemen allow me to introduce Chef Dempsey Perry @demps.perry in his second season @innatbayfortune and a local fellow who grew up on the island in Summerside. Dempsey wears two very important hats on the Fire Brigade. He’s a big part of our pastry team where’s his craftsmanship helps anchor our Bakeshop. He’s also our Service Expeditor, anchoring our Pass with his rock solid calm and indefatigable juggling skills to keep us moving smoothly through the evenings rhythms and rituals. In the off season he’s even our teams favorite D&D DM! From Dempsey: I had heard of the cultural shifts the inns kitchen was striving to make and felt like it was something really worth being a part of. So many kitchens aim for greatness on their plates but not beyond, this place really wants to be something different both for Guests AND Cooks. My fondest memories of my first year are the early mornings on the Upper Farm, usually while harvesting herbs for the day. It's not often you have an opportunity in a kitchen environment to pause, take a deep breath, and truly revel in the grander scheme of everything around you, but those mornings really helped to cement the sort of beauty we were all a part of The last picture from the summer of 2018, while I was working under Chef Megan Lambert at Open Eats. I was an Intern for the summer, and as a final hurrah we decided to have a Black Box competition, live, for a pretty sizable audience! We laughed, teased eachother, had a great night, and throughout it all we found moments to help one another despite the competition at hand, because in the end we knew it was never about the competition; this was, as always, about coming together to make some food to take pride in.
