We’ve been raving about the ‘onggi’ we recently imported from Korea. But what exactly is an Onggi? And why are we so excited about it? As many of you already know, Korean fermented condiments like doenjang, gochujang, and ganjang require lengthy fermentation and aging to naturally develop that deep, rich umami flavour. Onggi is a type of breathable clay jar traditionally used to store these Korean ferments. The history of onggi dates back to around 4000 to 5000 BCE, and they have been an integral part of Korean culinary culture. @gochang_onggi with seven generations of expertise, are renowned for crafting premium onggi. We are privileged to be one of the very few, if not the only, venues in Australia that can create our own Korean flavours, following the traditional fermentation techniques and methods, enabling us to introduce truly authentic Korean flavours to the already dynamic Australian dining scene.
