Timmin chimma 😍 An Iraqi childhood favourite (swipe for the dish 👉🏽). Simply made up of rice (Timmin) with desert truffles (chimma) 🍄 These truffles came straight from family in Iraq. Desert truffles are part of the fungi kingdom and are a family of truffles found in arid and semi-arid areas of the Middle East & North Africa. Found underground, the season for truffles in Iraq runs from mid-January to mid-April. Less pungent than the European truffle, they have a spongy texture, with a potato like shape and an earthy flavour. They’re rich in protein and meatier than a mushroom. 😍🍄 delicious.
