Crispy Rice Salad 🥗 one of my favourite ways to use up leftover rice, herbs and veggies at the end of the week! This recipe takes some inspiration from the Laotian Nam Khao - a crispy rice salad dish packed with fragrant spices and herbs. Made this slightly healthier by baking the rice rather than pan frying it, and just chopped and chucked in any leftover herbs and salad greens I had from the fridge. Give this one a go if you're looking for a crispy tasty way to use up those leftover greens! 💚 Recipe 👇 Ingredients 2 cups cooked rice 3 Tbsp oil 2 Tbsp thai red curry paste 1-1.5 cups of chopped herbs and greens (I had coriander, mint, spring onions and baby rocket) 1 red onion (sliced) 3 birds eye chillis (sliced) (optional) 1 garlic clove (minced) 3cm ginger (minced) 2 tsp sugar 1-2 Tbsp fish sauce Juice from 1 lime Garnish: roasted peanuts Method 1) Preheat oven to 200C. In a large mixing bowl, mix rice, curry paste and oil until well combined. Spread over a lined baking tray and bake for 35-40 minutes, stirring halfway. 2) Make your sauce by mixing together the garlic, ginger, sugar, fish sauce and lime juice. Taste and balance - it should taste sweet, sour and salty. Set aside. 3) Once the crispy rice is done, add to a large bowl then top with your chopped herbs and greens, red onion and chillis (if using). Pour sauce over and toss through.
