Perfect for an on the go snack! ā£ INGREDIENTS šā£ ā£ For the cookie crust:ā£ ā¢ 2/3 cup coconut flourā£ ā¢ Ā¼ cup arrowroot starchā£ ā¢ Ā½ cup maple syrupā£ ā¢ 1/3 cup coconut oil, meltedā£ ā¢ 1 large eggā£ ā¢ Ā¼ tsp saltā£ ā£ For the salted caramel:ā£ ā¢ 1 Ā½Ā cups pecansā£ ā¢ 20 pitted Medjool datesā£ ā¢ 3 cups boiling waterā£ ā¢ Ā½ tsp sea saltā£ ā£ For the chocolate:ā£ ā¢ 1 Ā½ cups unsweetened chocolate chipā£ ā¢ Ā¼Ā cup nut butter of choiceā£ ā¢ Ā¼ cup coconut oilā£ ā¢ Ā¼ cup maple syrupā£ ā¢ Ā¼ tsp sea salt, coarsely groundā£ ā£ DIRECTIONS šā£ ā£ To begin:ā£ Prep the caramel, by placing the dates in a medium bowl and cover with boiling water. Set aside.ā£ā£For the cookie crust:ā£ Preheat oven to 350 F. Grease an 8x8 pan with a little coconut oil and then line it with parchment paper to allow for easy removal after cooking/cooling.ā£ā£ Add all the ingredients for the cookie crust to a medium bowl. Mix with a fork (or clean hands) until well combined.ā£ā£ Press firmly into the lined pan and bake for 12-15 minutes until the crust starts to golden.ā£ā£ Once the crust has finished baking, remove it from the oven and set aside.
