It’s hammer time 🔥🔥🔥 . This beef hammer was created with Prime short rib meat. Typically you’ll see the “beef hammer” sold as a beef shank coming from a cow’s leg. Short rib still needs a low and slow cook & works well to braise. It has that fat & connective tissue to break down but it also has more delicious marbled beef 🥩 The butcher brought home short rib to trim like this to test for a customer. A restaurant locally wants to offer this on their menu. I am glad I got the practice piece. I’d definitely order it as a customer ⭐️ . The process: After it was trimmed & tied I used a hot sauce binder. @fyrstarter Black (check my bio and try these) After that I seasoned it using @lodgecastiron Tennessee Smoke sear blend Then I smoked it direct on the grate at 225°F on the @yodersmokers for almost an hour. Then I shifted it to a cast iron pan to catch the drippings. I smoked it uncovered in the pan for 5 hours. It eventually built up a crust and hit around 173°F I wrapped it in foil (pouring the drippings in) and set it in my @bbq_dripez meat resting blanket. Then I prepped the braising liquid: Ingredients: 1 onion diced 2 stalks celery diced 2 carrots diced 3 cloves garlic 2 tbsp tomato paste 2 c red wine 1 tbsp balsamic vinegar 4 c beef broth 2 bay leaves 1 tbsp fresh thyme Salt & pepper to taste 1. Diced onion, carrots & celery 2. Sautéed in olive oil until tender with garlic. 3. Add in the rest of the ingredients. 4. Set the meat hammer in the liquid and place in the Dutch oven (or deep pan) on the smoker. 5. Cook covered with lid 2 hours turning the smoker up to 300° 6. Remove the lid and flip the bone every so often to allow all sides of the meat to simmer in the braising liquid. 7. Remove the hammer when the meat temp gets to 203-205° if you want it to shred like mine. 8. You can use the liquid as your topping for the meat with rice, potatoes or polenta like I did. * You can also drain the fat and then add a cornstarch slurry to make a gravy with it. .
