Matcha Fudge Protein Bars -The perfect snack or breakfast to take on the go! 🏃 Ingredients: 2/3 cup plant based protein powder 1/3 cup oat flour pinch of salt 1 tsp Nekohama matcha 1/4 cup almond butter 1/2 cup unsweetened almond milk (+/- 2 tbsp) a few drops of almond extract 2 tbsp maple syrup 1 bar Nekohama matcha chocolate 1 tbsp coconut oil (or other neutral oil) To make: 1. In a large bowl combine your dry ingredients. 2. Add the almond butter, milk, maple syrup and almond extract. Mix with a spatula until everything is incorporated (*If you feel like the mixture is too dry, add up to 2 tbsp milk) 3. Transfer the mixture to a lined square freezer safe pan, press and level. 4. Put in a freezer for 2+ hours to set or leave in a fridge overnight. 5. Melt chocolate and oil together and pour on top of the fudge. 6. Place in the fridge for 10-15 mins to harden.
