Sazae - a Princess Turban sea snail - is a great delicacy in Japan. It's sweet & meaty, a bit briny & nicely chewy. It's a nice corner for the Zensai at @kapposono. As always, this second course is a giant combo of flavors & textures, a gambol across Japan, the world, the traditional and the modern. Collectively, they thrill us (and tell us how to eat in September). That's how a tasting menu emerges in the hands of one of our true visionaries, @sono_chikara_kapposono Detail of the zensai plate: - Bitter Melon & Fish Cake - the snail - hand pressed Kamasu Barracuda Sushi - Corn Tofu - Manganji Pepper from Kyoto & Dashi Omelet - Red Shrimp & NY Green Apple The Kappo style has a prescribed flow. It always starts with a series of appetizer courses. This time, Sono San's sakizuke is built around Hokkaido Snow Crab and Eggplant, with ginger juice and tatami iwashi (a cracker made of dried tiny fish). Dramatically rich, it's a big start. Amazing! After the appetizer plate, we move to Owan (a dashi soup) with Japanese Hamo Eel, Steamed in Dobin Teapot. It's a lighter course, meant as something of a palate refresher... but wow! Then there's the Otsukuri, a casually arrayed sashimi selection. It's seasonal, so it's toro from Boston, salmon from the Faroe islands, Kinmedai and Suzuki and Sawara from Japan. Perfect bites, all. Sono San is between places at the moment, so this was just a pop up at a friend's place (his new spot opens later in the fall). But even as a pop up, he dazzles us again. The Best.
