Chicken and Chorizo Waffles 🍗🧇 CHORIZO & CORN WAFFLES: -4 cups AP flour -2 tsp kosher salt -1 cup warm whole milk(90-100F) -2 tsp active dry yeast -2 eggs -3 Tbsp granulated sugar -5 Tbsp unsalted butter melted -1/2 cup chopped and cubed chorizo(cooked) -1/2 cup yellow corn Method: 1. In a liquid measuring cup stir together the warm milk and yeast, set aside for 5-7 minutes. In a small bowl beat together the sugar and eggs then stream in the melted butter while whisking. In a separate large bowl combine the flour and salt. 2. Pour the yeast mixture over the flour followed by the egg mixture. Begin to mix and knead in the bowl with your hands for 5-6 minutes. The dough will be sticky so just do your best to work the dough by pinching and squeezing it or slapping it against the side of the bowl. 3. Transfer the dough to a clean and greased bowl to let proof until doubled in size. Once proofed punch down the dough then spread it out on a work surface and sprinkle chorizo and corn atop the dough. Fold and knead everything into the dough. 4. Preheat and grease your waffle maker before placing in the dough and cooking until golden brown. CILANTRO LIME COLE SLAW: -1 bag of cole slaw mix -2 limes -1/2 cup mayonnaise -1/4 cup chopped cilantro -1 tsp chili powder -1 Tbsp honey -pinch of salt Method: 1. Combine all the ingredients in a bowl and squeeze in the juice of limes. Mix until combined. SPICY MAPLE BUTTER GLAZE 🔥🍁: -2 jalapeños -1 Fresno chili -1/2 cup unsalted butter -1/2 cup pure maple syrup -hefty pinch of salt Method: 1. Slice your peppers and add to a pan with the butter over low-medium heat. Let simmer for 3-5 minutes and just before the butter begins to brown remove from the heat and stir in the maple syrup. Season with salt to taste. 2. Drizzle atop your fried chicken and tell me how it makes you feel. #chickenandwaffles #chorizo #waffles #recipe
