This works great if you have a partner because it’s freshest for 3 days! It will make 6 servings so this will feed you AND your partner for 3 days. Don’t want 6 servings? Cut the recipe in half. Ingredients (6 servings): 16 oz shelled pasta 2 cups halved cherry tomatoes 2 cups diced bell pepper 1 cup diced cucumber 1/2 cup diced red onion 1 cup sliced hearts of palm (use sustainably sourced) 1/2 cup chopped parsley 1/3 cup sliced kalamata olives 2 cups chopped spinach Optional: 1 can chickpeas rinsed and drained Dressing: 1/3 cup olive oil 3-4 tbsp balsamic vinegar 1 heaping tsp dijon mustard Salt + pepper How to: 1. Make pasta then rinse with cold water. Add into a large bowl. 2. Prep and dice all veggies then add to the bowl. 3. Whisk together dressing ingredients then pour over salad. Add more dressing if you like it extra saucy! 4. Store in the fridge up to 5 days.
