📍🇲🇴 #foodieleimacao #foodieleitokyo 🤭 🌟Daniel Calvert of SÉZANNE Tokyo pop-up in Aji, MGM COTAI (3/3) 🥭宮崎芒果配朗姆香草醬 向來以綿密滑順、香甜濃郁著稱的宮崎縣芒果,來頭當然不小;但半塊芒果聳立在大餐碟的中心,在開玩笑?原來由內到外皆有乾坤——一層毫無切割痕跡的「粒粒」芒果肉下,藏著清甜爽朗的芒果雪芭,以及薄薄一層幼滑的蛋白霜;面頭則大方地加上一大球香緹奶油,混入奶油酥餅和蘭姆酒,令芒果的滑甜幾何級上升。除了刀工滿分、創意也是滿分,為這趟夢幻的嚐味之旅劃上完美句號。 ✍🏻後記:時隔四年,終於再度品嚐Daniel Calvert的手藝——是精確、優雅、細膩又大氣,很難不令人欣賞。由香港到東京,Chef Daniel已是當今餐飲界的最受追捧的星廚,坐擁米芝蓮二星,以及亞洲 50 最佳餐廳 2023 第二名和 2023 年日本最佳餐廳的成績🌟期待到東京的SÉZANNE再次品嚐。 ❗️後後記:聽聞日後「雅吉」將會邀請更多客席星廚做pop-up,密切留意! 🥭Miyazaki Mango with Shortbread Crème Chantilly Yes, mango from Miyazaki alone is something to rave about, maybe not too exciting to have a piece of raw, unpeeled mange centred on a plain plate? Well, surprises lies under - beneath the layer mango cubes is mango sorbet and a thin layer of fluffy meringue, and then topped with a generous scoop of crème chantilly of shortbread and rum. Round of applause to the super delicate knife work and the remarkable creativity behind. ✍🏻PS. After 4 years, finally had the chance to taste Chef Daniel’s exquisite cooking agian - truly precise, elegant, delicate and magnificent. Not surprised that he’s become one of the brightest star in the culinary scene worldwide with 2 Michelin stars, No.2 on Asia 50 Best and Best Resto in Japan 2023 in his tally. Looking forward to visiting SÉZANNE in Tokyo, hopefully soon! PS. heard that Aji will collab with more big names in the industry in the coming months - stay tuned!
