MY SOURDOUGH BREAD RECIPE 🥖 • so therapeutic and I promise you will never want to buy bread EVER again Levain (Day 1): ➕ 30g sourdough starter* ➕ 60g strong white bread flour ➕ 60g water Dough (Day 2): ➕ Levain (150g total weight - see above) ➕ 500g strong bread flour [I often use a mix of white and multigrain - here I used 350g white and 150g grain] ➕ 320ml warm water ➕ 10g salt - Method - Day 1 (PM): ▫️ Mix together your ingredients for the Levain (see above) and cover with a non-airtight lid. Leave for 6-8 hours, or until doubled. I like to make my Levain at about 11pm on Day 1, then I know it is ready for when I wake up on Day 2. Day 2 (AM): ▫️ Pour the water into a large bowl, then add in your risen Levain (it should float)! Dissolve into the water using a dough hook or your hands. ▫️ Add in your flour and salt and mix thoroughly, but it is fine if the dough still looks shaggy at this stage. Cover with cling film or a damp towel and leave to rest for 30 mins. ▫️ After 30 mins, you can begin to perform 4 sets of stretches and folds every 30 minutes - so 2 hours in total. ▫️ Cover again and leave the dough to prove in a warm place for 2-3 hours. ▫️ Shape your dough (youtube!!), then turn into a banneton well coated with rice flour. Cover and place into the fridge for the final overnight prove. Day 3 (AM): ▫️ The next morning, pre heat your oven (with your Dutch oven in it) to 250 degrees. Meanwhile, turn out your dough onto baking paper and score deep cuts along the centre with a razor blade. ▫️ Carefully place the dough into the Dutch oven and bake for 30 minutes with the lid on. ▫️ Then, remove the lid of the Dutch oven, turn the heat of the oven down to 220 degrees and bake the loaf for a final 15 minutes with the lid off. ▫️ Leave to cool for at least 2 hours before slicing and ENJOY YOUR CREATION 🤍 *my mum kindly gave me some of her starter, however you can make your own (which I believe takes about 2/3 weeks of regular attention), or, you can just buy mature starter online!
