Wait for the crumb revealβ¦ and some reflections on this loaf π Made this sourdough bread with about 20% @haydenflourmills artisan bread flour, which Iβve been experimenting with. It was super active and I should have cut bulk fermentation short by another 30mins or so bc I had some shaping issues since the dough was on the verge of overproofing. The fast fermentation had a cascade effect with a rushed and stickier shaping and a more difficult score (you can see my sharp bread lame had a hard time cutting and I had to go over it again), which both led to a trapped air pocket in the dough. So even though I was decently satisfied with the result considering the circumstances, the largest hole in that crumb reveal isnβt from an open alveolus or open crumb, but actually from a missed air pocket during shaping. That being said, it was a delicious loaf and experimenting with new flours is probably one of my favorite things to do. Iβll note for next time I use this flour to cut bulk a little shorter! #sourdough #sourdoughbread #sourdoughscoring #opencrumb #sourdoughbaking
