Delicious things on toast, we have been having more lately. One of them, Muhammara, Cevizli Biber, as we call in Antakya, southern Türkiye. I adore Muhammara, one of my fave dips, always keep a tub in the fridge. it is so versatile; enjoy as meze, with grills,roasted veg, over toast, for brunch as a sandwich filler. Fantastic way to use up stale bread too The other one is Fava dip with puréed broad beans, lemon juice, olive oil, so good. Fresh fava beans in season or frozen ones all year around works great - we also use dried fava beans for this dip and you need to soak that overnight. Cooked broad beans then puréed with sautéed onions, lemon juice, seasoning, olive onion and dill and turns into a delicious dip. You could sauté a chopped red pepper to have aside and enjoy with poached egg over toasted bread as I love. If you haven’t made Muhammara yet, I hope you do, so easy and delicious. Here is my recipe, from #ozlemsturkishtable , Afiyet Olsun x Serves 4-6 3-4 slices of stale bread (about 70 gr) 1/3 yellow onion, chopped 3 tbsp Turkish red pepper paste 2 tsp double concentrated tomato paste 225g walnuts, shelled 2 tsp ground cumin Pinch of Salt 4 tbsp extra virgin olive oil 1 tbsp water To serve: 1 tbsp extra virgin olive oil 1 tsp pul biber/ red pepper flakes 1 tsp cumin pide bread or crackers to serve Ground the walnuts with the onion, cumin, salt and red pepper paste and tomato paste in the food processor. Soak the bread into water and squeeze the excess water. Crumble the bread and add to the mixture in the food processor. Add the extra virgin olive oil and water and blend to make a smooth spread. If it appears to be too thick, add a little more olive oil. Place the spread on a small salad plate or bowl.
