green goddess chicken & veggies sheet pan meal šš§ in the past few years, iāve really leaned into using fresh herbs in my recipes and let me tell yaā¦itās been one of the biggest game changers! truly such an easy + cheap way to add so much flavor. this homemade, tahini-based green goddess sauce is packeeed with all sorts of herbs and it really levels up this sheet pan meal. you could honestly use whatever veggies are your fav but i went for brussels sprouts & carrots for a little *intro to fall* vibe š¤ RECIPE (gluten free, dairy free): for the chicken: -1.5 lbs boneless, skinless chicken thighs -1 tbsp olive oil -juice from 1/2 lemon -1 tsp salt -1/2 tsp paprika -1/2 tsp garlic powder -1/4 tsp black pepper for the veggies: -9 oz carrots (4 large carrots), cut into thick pieces on the diagonal -12 oz brussels sprouts, halved -1 tbsp olive oil -1/2 tsp paprika -1/2 tsp garlic powder -1/4 tsp pepper -1 tsp salt for the green goddess sauce: **makes more than youāll need** -1 cup parsley -1 cup cilantro -1/3 cup dill -1 green onion, chopped -2 cloves garlic -juice from 1 lemon -1/3 cup tahini (if you donāt like or have this, i would try either cashew butter or plain greek yogurt) -1/4 cup water -salt + pepper to taste preheat oven to 400F. add all chicken ingredients to a large bowl and toss until coated. set aside and let that marinate while youāre preparing the rest of the ingredients. add veggies to a baking sheet and drizzle olive oil and seasonings over top. toss to coat and then spread out evenly across the sheet pan. add the marinated chicken to the sheet pan & bake for ~22 minutes, until veggies are tender and internal temp of chicken has reached 165F. while thatās baking, add all green goddess sauce ingredients to a high-speed blender and blend until smooth, adding more water as needed to get to your desired consistency. drizzle the sauce over the chicken & veggies and top with more fresh chopped herbs & red pepper flakes. enjoy! #greengoddess #sheetpanmeals #easyandhealthy #healthydinnerideas #weeknightdinner #chickenrecipes #carrots #brusselssprouts #freshherbs #glutenfreedairyfree #paleorecipes
