Creamy Chicken Fajita Pasta 🤌🏼🤤 Soooo good, super easy budget weekday meal idea for the Autumn 🤎🍂 I love fajitas, and turning it into a pasta dish is just 🤌🏼 Day 6 of 15 Days of Autumn Recipes! Chicken Fajita Creamy Pasta Feeds 4 - 6 Ingredients: Chicken thigh fillets 4-6, sliced 2 peppers, core out and sliced 1 red onion, sliced 2 tsp smoked paprika 1 tbsp cumin 2 crushed garlic cloves 2 tsp ground coriander 1tsp chilli powder (I go with hot) 1 tbsp dried oregano 2 heaped tbsp cream cheese Handful grated cheddar Pasta to serve 4 Method: 1. Cook pasta until al dente, drain and set aside. (I normally save a little bit of the pasta water for the sauce). 2. Heat a large pan over medium-high heat and add a little oil. Add sliced chicken thigh fillets and cook until browned and cooked through. Remove the chicken from the pan and set it aside. 3. In the same pan, add sliced peppers and red onion. Cook until they start to soften. I add a little more olive oil here. 4. Stir in smoked paprika, cumin, crushed garlic cloves, ground coriander, and chilli powder. Cook for another minute or until fragrant. 5. Return the cooked chicken to the pan, fry all together for a few mins. Turn the heat down, add dried oregano, cream cheese, and a handful of grated cheddar. Stir until the cheese is melted and everything is well combined. 6. Toss the cooked pasta into the creamy chicken and veg mixture. Mix until the pasta is coated with the creamy sauce and heated through. 7. Serve your Chicken Fajita Creamy Pasta with an extra sprinkle of cheddar on top.
