L’#Acquerello di @simo.naricci 🏵Risotto allo zafferano con pesto di prezzemolo, pancetta speziata croccante e fiori eduli🏵 Oggi uno dei piatti che più adoro cucinare: il risotto!!! Trovo che sia un piatto completo e versatile, elegante e raffinato, adattabile ad occasioni diverse. Per lo zafferano ho utilizzato circa 9 pistilli a testa lasciati in ammollo un'ora in un bicchiere d'acqua calda che ho aggiunto a fine cottura. Per il pesto ho frullato prezzemolo fresco con mezzo spicchio d'aglio, sale, acqua e olio evo poco prima di impiattare. La pancetta l'ho cucinata in una padella a parte fino a renderla croccante ed eliminando di tanto in tanto il suo grasso.
