Love your liver salad. Why? Artichokes are magic for the liver contain slymarin which is the same complement in milk thistle that supports liver health and protects the liver. Artichoke also helps with the production of bile, supporting digestion and also helping to remove harmful toxins from the body. Other studies have found artichoke to reduce inflammation and liver enzymes. PMID 35949599 Artichokes are also a source of fibre and contain inulin which is prebiotic. Prebiotics help feed the good bacteria in your gut allow them to grow. A 2012 study showed that having 10g of inulin from globe artichoke led to improvements in the gut microbiome PMID: 20591206 Artichoke can support digestive health by increasing bile but also helping with the movement of food through (gastric motility) through the digestive tract. PMID: 26813467 A great way to incorporate it is in a salad before your meal with other greens and bitters like this. You can buy these in a jar or in the deli section of all supermarkets are they are so easy to add to the side of any meal or salad. They are an essential in all my salads. All the other ingredients are magic too. Onions provide sulphur, again needed by the liver. 4-5 types of greens here - remember each green counts as a different plant point (see yesterdays post) so great for the gut microbiome but also supportive of liver health.
