🍮 COCONUT FLAN 🍮 AKA ‘Flan de Coco’ 🥥 So rich and creamy bursting with tropical flavour 🌴 This is my recipe inspired by the popular Caribbean dessert, and it’s unbelievable simple, you have to try it 👇 🥥🍮Coconut Flan recipe 👇 (makes 8 ramekins or 1 big flan) 1 c sugar 5 eggs + 2 egg yolks 1 x 400ml coconut milk can 1x 397g sweetened condensed milk can 125ml milk 1 tsp vanilla paste Garnish Shaved or shredded coconut toasted Instructions: Arrange 8 ramekins on a deep baking tray Turn oven to 170C fan forced / 180C conventional oven ❇️ Dry caramel - use a heavy bottom pan, add the sugar in a single layer and once it starts melting add a little bit more, do not touch, do not whisk, every now and then swirl the pan several times for the sugar crystals to melt, once all the sugar is dissolved and you have a deep amber colour, pour into the bottom of 8 ramekins and into the fridge for 10-15 min ❇️ Flan Mixture - In a bowl add the eggs and the yolks, sweetened condensed milk, coconut milk, milk, vanilla paste and mix, and then strain, I like to rest the mixture for a few minutes to allow for bubbles to subside, then pour evenly onto the 8 ramekins. ❇️ Baking - prepare the bain marie, add boiling water to the baking dish to reach halfway of ramekin molds, cover with aluminium foil and bake for 35 to 40 min, it will have a slight jiggle but it has to be set (adjust baking time according to the size of your ramekins, for a big flan you may need to cook for 1 hr or more) ❇️ Cool - Remove ramekins from baking dish, let cool in the fridge for at least 3 hrs or overnight, run a knife around to loosen the flans and unmold, garnish with toasted coconut and enjoy 🤗 #coconutflan #flandecoco #easydesserts #baking #cremecaramel #coconutdessert #caribbeancuisine
