Lightest gluten free cake with a probiotic icing and mixed berries. We had guests over last night and I wanted to make a cake and make the most of all the seasonal berries. I made a basic gluten free cake but added ground almond, olive oil, lemon rind and yogurt for some added gut loving goodness. We know almonds help feed microbe in your gut like bifidobacteria, yogurt is a probiotic food, lemon rind not only lifts the flavour but I love it for liver benefits and olive oil is a super healthy fat and full of gut loving goodness too. The trick with the cake is to separate the egg from the egg white, beat them until soft peaks form. It honestly makes it soo light and if you see my stories you can see all the air bubbles and how light it is. I literally just add the whites to a blender and let it do all the hard work. It takes about a minute and then you fold this in to the mixture at the end. All the other ingredients just get thrown into a bowl and mix. It is a quick cake. This cake isn’t as sweet as a regular cake so you could add an additional 1/2 cup of coconut sugar if you wanted to. I think its quite nice this way as you do have additional sweetness in the greek yoghurt and from the berries. Ingredients 2 cups ground almonds 1 cup self raising flour - I used gluten free 1 cup coconut sugar 4 eggs SEPERATED. 1 cup olive oil 1/2 cup milk of choice. 1 tsp baking powder Zest from one lemon MIX everything in a bowl EXCEPT THE EGGS WHITES Put the egg whites in a blender for 1-2 minute until soft peaks forms then add to batter and fold in right at the end. Pour into a lined cake pan of choice and put in a preheated oven 180 degrees for 25 minutes Let cool and then mix one cup of greek yoghurt with the rind of one lemon and one tablespoon of sifted icing sugar. Top the cake with this and then fruit of choice.
