My brand new recipe for the fall! 🍂 a Pumpkin Spice Bundt Cake with Caramel Sauce that is absolutely delicious, and also gluten free, dairy free and refined sugar free! It’s sweetened with coconut sugar and the natural caramel sauce is sweetened with Manuka honey and maple syrup. The secret to this natural caramel sauce really is the @sunbutter 🌻 Made with roasted sunflower seeds it gives that caramel flavor we all love and the smooth consistency. Enjoy this fall inspired recipe you guys! 🍰 Pumpkin Spice Bundt Cake with Caramel Sauce Total time: 45 minutes Makes one large Bundt cake Ingredients: Coconut oil for greasing 2 tablespoons sunflower seeds 6 organic pasture eggs 2/3 cup water 2/3 cup @nutiva refined coconut oil 2 tablespoons of vanilla extract My gluten gluten free flour blend: 1 1/2 cup almond flour 1 1/4 cup arrowroot flour 1 cup coconut flour 1 1/4 cup coconut sugar 2 teaspoons baking soda 1/4 cup Pumpkin spice or pumpkin spice mix: 2 tablespoons cinnamon 2.5 teaspoons all spice 1 teaspoon ginger 1 teaspoon cloves 1/2 teaspoon nutmeg 1 teaspoon Cardamon Dash salt Caramel sauce: 1/4 cup / @shop_pri Manuka honey (the thick Manuka honey like this works best) 2 Teaspoons organic @sunbutter Dash sea salt 1 tablespoon maple syrup 1/8 teaspoon vanilla extract 10 pecans for garnish Actions: 1. Preheat the oven to 325. 2. Grease a cake pan with coconut oil. Sprinkle the sunflower seeds on the bottom of a Bundt cake pan. 3. In a large bowl whisk the eggs, water, oil and vanilla. 4. Add the gluten free flours and baking soda. Mix well. 5. Stir in the pumpkin spices until we’ll combined. 6. Pour the cake into the Bundt pan and bake for 30-35 minutes. 30 minutes should be enough as the cake will continue to cook slightly. 7. Meanwhile make the caramel sauce by adding all ingredients into a small bowl and mixing until thick and smooth. 8. Let the cake cool or place in freezer for 5-10 minutes. Once cool pour the caramel on top. Add pecans on top and it’s ready to serve! This recipe was originally created for my @vitacost blog.
