Fattoush 🍃🥣 If you want to make a salad that everyone is guaranteed to like, you need to make fattoush. The crispy fried bread is such a simple yet addicting element. Oh and yes, pomegranate molasses is a MUST!! 🙌 Dressing 1/3 cup olive oil 1/4 cup lemon juice 1.5 tbsp pomegranate molasses 1 tsp sumac 1/2 tsp salt 1/4 tsp freshly cracked black pepper Salad 1 small head cos/romaine lettuce, sliced 1 cucumber, quartered and sliced 1 tomato, diced 1 small bunch radishes, thinly sliced 1 green capsicum, diced 2 stalks green onions, thinly sliced 1/4 loose cup parsley, finely chopped 1/4 loose cup mint, finely chopped Handful fresh pomegranate Topping 1 piece Lebanese bread Oil, for frying Method: 1. Prepare the topping first by preheating your oil. Roll your Lebanese bread into a tight roll then slice into 1-2cm thick pieces. Drop into the hot oil and allow to fry until golden and crispy. Drain and set aside. 2. In the meantime, combine all of the dressing ingredients and whisk well. 3. Add all of the salad ingredients into a large bowl. When ready to serve, pour the dressing on and mix well. 4. Transfer onto a plate and top with the fried bread.
