Created this millet vegetable soup recipe inspired from various variations on Instagram, a wholesome dish that works perfect for dinner or any meal. Ingredients: 2 tbsp - Ragi flour (finger millet flour) 1/4 cup each - vegetables (carrots, beans, cabbage, corn) 1 small onion, finely chopped 2 cloves garlic, minced 1 tsp ginger, chopped 4 cups vegetable broth or water 1/2 teaspoon black pepper Salt to taste 1 tsp oil Fresh coriander leaves Heat oil in a huge pan, add garlic, ginger, chilli, onion. Sauté until the onion softens, add vegetables saute for a few minutes until the vegetables start to soften. Season with salt, pepper. Add veg stock / water bring it to gentle boil. In a separate bowl, mix the ragi flour with little water to form a smooth paste, add the ragi paste to the pan and stir well slowly, let the soup simmer on low heat until the ragi flour is cooked and the soup thickens.
