Not only does his creation honor the rich culture of his Puerto Rican heritage, 🇵🇷 it pays tribute to one of the little known, but highly influential Black bartenders of the 1800’s, and one of the “Julep Kings” of Virginia, Jasper Crouch. 🤩 And you’re gonna wanna sip this cocktail ALL SUMMER LONG!! 🍹🤤 Tio Arbol Ingredients: 1.5 oz Uncle Nearest 1856 .5 oz Ten To One Dark Rum 5 Salted Pineapple chunks* .5 oz Plantain Demerara Syrup** Add all ingredients to a cocktail shaker with 7 ice cubes and shake for 8-10 seconds. Fine strain into a chilled Julep cup or rocks glass over crushed ice. Top with more crushed ice and garnish with dehydrated piña (pineapple), three pineapple leaves, powdered sugar, and a pinch of salt. *Salted Pineapple Chunks: Take a tsp of Himalayan pink salt and coat 1 cup of pineapple chunks, toss pineapple and store for later use. **Plantain Demerara Syrup: 137 g ripe green plantain 500 g Demerara sugar 1 cup of water Chop ripe green plantain. Bring water and chopped plantain to a boil and let simmer for five minutes on low heat. Add sugar and stir until dissolved. Store and cool before use.
