MAGWINYA Homemade light and fluffy magwinya served with white liver and atchar. There has been so many magwinya on my timeline I thought “it must be a sign” 😜 I decided to type out the recipe this time since there was a huge panic when you guys thought it was gone from my highlights 😂 so there you go, save this post: INGREDIENTS -4 cups cake flour -1 cup brown sugar -1 packet (10g) yeast -1 teaspoon salt -1 and 1/2cup warm water (you might not use it all) -Oil for frying METHOD 1. Combine dry ingredients in a large bowl then add in warm water. Be sure to add in the water only a little bit at a time to avoid adding too much. You want the dough to be a sticky and “pullable” consistency (see video) then cover and set aside to rise in a warm place for 1 hour or until double in size. 2. Once dough has risen tip it out onto a lightly floured surface then very gently flatten out (see video) do not press too hard because you don’t want to punch out all the air pockets or else your magwinya will be hard. 3. Then cut into desired shape, I used a large spoon, you can even use a cup. 4. Deep fry in oil until golden then serve TIPS FOR FRYING: *get the oil temp right. If oil is too hot magwinya will burn on the outside before cooking on the inside. If it is too cold they will absorb the oil and be greasy on the inside. *when I fry my magwinya I prefer to constantly keep turning them in the oil instead of letting them brown on one side then turning them to brown on the other. I find that turning them constantly allows them to cook more evenly.
