Himachal Recipe Patrodu 😋 Ingredients🍃 5-7 Colacassia leaves (kachaloo patta) 1 cup Besan 2 tablespoons Rice Flour 1 tablespoon ginger and garlic (crushed) 1 teaspoon Turmeric 1 tablespoon Amchoor Powder 1 teaspoon Coriander Powder Salt to taste Water to make a thick batter Mustard oil for frying Recipe🍽 - Wash the Colocasia leaves. Flip the leaf and using a sharp knife remove the hard stem. This will help lay the leaf flat making spreading the batter easy. - Add besan, rice flour, and all the dry ingredients in a bowl. Add a little water to make a thick paste. You should be able to pick up the batter with your fingers. - Spread the mixture in a thin layer on the veins side of the leaf. - Place another leaf over it and repeat the process. Layer at least 3 more leaves in the same manner. - Fold the sides of the leaf and overlap them spreading the batter on each side. Starting with one end start rolling them tightly and spread the batter on the rolled leaves. - Wrap a fresh turmeric leaf around the roll. This is traditionally done in Himachal for lovely flavour and aroma. - Make as many rolls as you want. Place the rolls in the steamer or over a jali in a kadai. Cook for at least 15-20 minutes on low medium flame. - You'll know it's ready if the knife comes out clean when you pierce it in the roll. - Cut the roll into 1/2" pieces and fry them on medium flame. You can pan-fry or deep-fry. If you are pan frying, then take your time and cook them well. They should be dark brown and crispy when they are done.
