Summer heat is back on at our part of the world and looks like staying all week🌞I will be hunting down watermelon and if lucky enough, make the cool watermelon - feta (or our creamy beyaz peynir) , our favourite karpuz-peynir duo🍉 if no luck with watermelon, a ripe melon, plums, figs, berries complement sharp feta well too. Some thinly sliced onions, few fresh mint lovely with it - as well as olives instead of feta / beyaz peynir or sautéed halloumi / hellim❤️ And last of the apricots can be enjoyed baked, with clotted cream over. Simply half them and place on a baking paper over a tray. Spread about 1/2 tbsp unsalted butter over them and sprinkle about 2tbsp Demerara sugar over. Bake at preheated fan oven at 200C for 12-13 minutes, they will char at edges and soften but will still hold their shape. Place on a serving plate and once cool, spoon clotted cream over the apricot halves (we would use our thick clotted cream, kaymak in Türkiye). Sprinkle pistachio over. Though I like the tart flavour here, a little drizzle of honey over them when serving works deliciously and complements the tartness of apricots. You can serve at room temp or cover and keep in the fridge for a couple of hours and serve cool. It makes a lovely light treat.
