Selins Su Böreği 🇹🇷 my sister inlaw came over last weekend, rolled her sleeves up & MashaAllah she smashed this out like a pro Nene in a village somewhere with her scarf tied to the back of her head 🤣 This borek is one of the much loved Boreks in Turkiye, Su Böreği translates to ‘Water Borek’ where the pastry sheets are boiled before layering in a pan then scattered your favourite fillings between each sheet. Then baked till golden. The result is a crunchy exterior & a super moist juicy filling! It’s a labour of love & my FAVOURITE type of Borek 🤤 she made 2 flavours one Kiymali (beef) & one Peynirli (Cheese). Are you familiar with this type of Borek ? Selins Su Borek Makes 2 medium trays - approx 30cm wide 6 eggs 3 cups of flour, to start 1.5 teaspoons salt Cheese Filling: (tray 1) 400g crumbed feta of choice Handful of chopped parsley Meat Filling: (tray 2) 500g beef mince 1 finely chopped onion Salt + Pepper to taste Veggie or canola oil to drizzle between layers. First prep your fillings. Mix parsley through feta & set aside. Sautee onion in olive oil, add mince & brown. Add salt + pepper, set aside. Dough: Crack eggs into a bowl, add flour 1 cup at a time & combine. Knead into a smooth dough & forms a smooth ball. Cut ball into 10 rounds. Using a long thin Turkish rolling pin (Oklava) roll very very thin 1-2mm, dusting with flour as you go. Lay all 10 sheets on a table & start boiling your water. Have a bowl of cold water on hand & a sieve or slotted spoon to easily transport your dough sheets to the water bath. This water will be replaced with clean cold water with every 2 uses. You can use an iced water bath instead but not necessary. Carefully add your dough rounds to your boiling water, using your spoon to carefully swirl so it doesn’t stick. Should take about 45 seconds. Then add to your water bath, carefully squeeze excess water & layer in your greased tray. Add a sprinkle of your favourite filling between layers & repeat steps to make a 5 layered tray. You can brush the top with butter or drizzle with oil. Bake at 180c until golden & crispy, approx 30min. Serve with Turkish tea ☕️ #suböreği #börek
