air fryer meatballs with herby lemon garlic zoodles š± based on the poll results from my stories the other day, yāall are READY for fall recipesā¦but iāll be holding off just a *little* bit longer until itās below 90F out š so zucchini recipes it is! this is giving shrimp scampi vibes but with meatballs instead and of course swapping in some veggies for the usual pasta. the meatballs are super low maintenance and take 10 minutes to cook in the air fryer!! plus the whole dish is gluten & dairy free for all my peeps who need it š«¶ RECIPE (gluten free, dairy free): for the meatballs: **makes 16-18** -1 lb ground beef (i used 90% lean, ground turkey of similar leanness should work too) -1 egg -1/4 cup diced yellow onion -1/4 cup chopped parsley -1/3 packed cup almond flour -3 cloves garlic, minced -1 tsp dried oregano -1 tsp salt -1/4 tsp pepper for the zoodles: -3 medium zucchinis, spiralized -1/4 cup chopped parsley -2 tbsp vegan butter (normal butter or ghee works too) -juice of 1 small lemon -3 cloves garlic, minced -red pepper flakes to taste -salt + pepper to taste add all meatball ingredients to a large bowl and mix until incorporated but try not to overmix. set aside in the fridge for 10-15 minutes. then, form into heaping 2 tablespoon sized balls. place on an air fryer tray and air fry at 400F for 10 minutes (should work in the oven too but time may vary). meanwhile, if you want to get rid of some of the extra moisture from the zucchini noodlesā¦season it heavily with salt and then let it sit on a paper-towel lined plate for about 10 minutes. then, preheat a large pan to medium heat. once hot, add butter and let it melt. then add garlic and stir constantly for 30-60 seconds. add in lemon juice. then, add in zuccchini & parsley. stir. season with salt, pepper & red pepper flakes. let cook for 3-4 minutes until tender. add in the cooked meatballs & enjoy! #zoodles #meatballs #healthydinnerideas #weeknightdinner #airfryerrecipes #glutenfreedairyfree #paleorecipes #whole30recipes #lowcarbrecipes #zucchinirecipes
