Overcooking Noodles: Boil noodles until still firm; they’ll soften more in the stir-fry 👌🏻 2. Wrong Oil: Use high-smoke-point oils like avocado or peanut for frying without oil breakdown and off flavors 👎🏻 3. Overcrowding the Pan: Adding too many ingredients at once can lower the pan’s temperature, resulting in steamed vs. stir-fried ingredients. 4. Skipping Marinade: Even a quick soak makes juicier, more flavorful chicken. Cornstarch in the marinade forms a protective barrier around the meat, trapping juices inside and preventing them from evaporating during cooking 💥 5. Poor Prep: this is a super quick-cooking dish. Chopping/measuring as you go can result in a soggy, overcooked chow mein.
