Burghul a Jej (Spiced Burgul & Chicken Pilaf with chickpeas) 🍗 this dish is also known as Burghul Bidfeen. The first successful meal I made as a newly wed & is still a hit 15 years on! Have you tried this recipe ? It’s so good with Lebanese style garlicky cabbage salad & a refreshing cucumber yoghurt. Here’s the full recipe 👇 Burghul & Chicken Pilaf ‘Burghul 3a Jej’ 2 large or 3 medium breast fillets on the bone, or thigh if preferred @akarmeats 1 large quartered onion 2 cinnamon sticks 1 bayleaf Cover the chicken & aromatics with cold water, bring to a boil then simmer until cooked, approx 15min making sure to skim the foam off the surface. Remove chicken & reserve stock. Once chicken is cool enough to handle shred & set aside. For the burghul: 2 cups of course light burghul 1 diced onion Handful of vermicelli noodles 2 washed & drained cans of chickpeas 1 teaspoon Lebanese spice 1 teaspoon ground cinnamon 1/2 teaspoon cumin 1 chicken stock cube Salt & Pepper In a large pot sauté the onion in some olive oil &/or ghee. Once translucent add the vermicelli noodles & cook for a few minutes. Add the slices & stock cube & toast them off for a minute before adding the chicken, chickpeas, burghul & 4 cups of the stock. Season well with salt & pepper. Bring to a boil then reduce heat to lowest, cover and cook for 18minutes. Serve with cabbage salad and/or cucumber yoghurt. Lebanese Cabbage Salad Half a head shredded cabbage Handful chopped parsley Handful chopped mint 3 sprigs sliced spring onions 3/4 diced tomatoes Dressing: 4 crushed garlic Juice of 2 large lemons 1/4 cup extra virgin olive oil 1/4 teaspoon cumin Salt & pepper Whisk well, pour over veggies & toss. #burghul3adjej #burghulbidfeen #burghul #lebanesefood #lebanesefoodie
