Another hot day here in Sydney 🇦🇺 I made a fresh & zesty Tabouli along with kebbeh nayeh & home cut fries, name me a better trio 😋 if you watched my story you would’ve seen how I showed you how to sort, prep & cut your parsley for best results. I was taught to sort the big bunch into smaller bunches so it’s easier to wash, clean & chop. When sorting try group the stems so the starting point for the parsley leaves are together so you get minimal stem! Here’s the full recipe 👇 TABOULI 1 Large bunch parsley (they may come grouped into 6 smaller bunches) 1 small bunch finely chopped mint 3 large finely chopped tomatoes 1 finely chopped yellow onion 3 sprigs spring onion sliced Small handful of fine brown burghul Juice of 3 big juicy lemons 1/4 cup good quality extra virgin olive oil Pinch of salt Pinch of 7spice (optional) Sort your parsley by grouping the big bunch into 6 smaller ones (or 4 depending on the size of your bunch). Line your stems together so the starting point of the parsley leaves are aligned together. Tie them up with a rubber band & cut the stem leaving 1-2cm. Fill your sink with clean water & throw your parsley bunches in. Once the water settles remove & let them air dry. Finely chop your parsley using a sharp knife. Add the rest of the ingredients & taste.
