Mini Focaccia with marinated feta cheese, the crust isππ»mua! Dough: πΎ250g Bread Flour @kingarthurbaking π§200g Water (80%) πͺ50g sourdough starter (or 1g dry yeast) π§4gr Salt Marinated feta cheese: mix 5oz feta in cubes, 1/4 cup evoo, 3tbs chopped parsley, 1tbs dry oregano, 1tsp chopped chili, ground pepper, 1/2 lemon zest, 1/2 lemon juice. ππ»Mix all dough ingredients but salt. Rest 30min, add the salt, and start working the dough until it is smooth and elastic. Rest. ππ»The dough is sticky, wet your hands perform 3 sets of stretches and fold 40 min apart. Total bulk 4 hours. Transfer to the fridge. ππ»After 24/48 cold retard, place the dough in an oiled pan (9x5in) and let rest covered again at room temp until you see it puffy (1 or 2 hours). ππ»Stretch it out if needed, wet your fingers, dimple, and add the marinated feta. ππ»Bake at 450F -20min until golden.
