Cute mini pumpkin bread filled with #guava paste and cream cheese. This is the season🍂 👉🏻Sourdough sweet levain: 30g sourdough starter + 60g bread flour + 60g water + 6g sugar 👉🏻Dough: -150g bread flour + 150g all purpose flour @kingarthurbaking -110/115g milk -150g sweet levain (sourdough starter) -1 egg -35g sugar -35g Soft butter -5g vanilla extract -4g salt 👉🏻Filling: Guava paste and whipped cream cheese. 👉🏻Brush before and after baking with a mix of honey and water 👉🏻Topping: cream cheese icing, whisk 4tbsp soft cream cheese, 2tbsp caster sugar, 1teaspoon vanilla, 3tbsp milk (more or less) 👉🏻Process: -Mix flour, starter, egg, milk, salt, and sugar until well incorporated. -Add butter in 2 or 3 batches and mix until a soft and elastic dough is formed. Check for the windowpane. -Make one ball and rest for 4 hours. Take it to the fridge until the next day (12 hours) o continue with the following step. -Divide the dough into equal parts. -Take one piece at a time and stretch it out making a small circle -Fill it with any marmalade and cream cheese, and seal. (see video) -Add oil to the threads and wrap each ball (see video), cover, and let them proof for 2 or 3 hours, they will look puffy. -Brush with honey+water. -Bake at 350 for 30-35min.
